MILWAUKEE, WISCONSIN – MobCraft Beer of Milwaukee and the Village of Waterford have come to an agreement for MobCraft to purchase and develop the old Waterford fire station located at 122 N 2nd Street off on Main Street along the Fox River. Once renovations are complete, the building will feature an indoor/outdoor bar, a full kitchen, brewery, dining area, and a 1500 square foot event space. MobCraft hopes to match the success of their Milwaukee taproom in Waterford by emulating the community building foundation of crowdsourcing, an active mug club program, and hosting large festivals with neighborhood involvement. In true crowdsourcing fashion, Mobcraft is raising funds from equity crowdfunding on Wefunder, giving patrons a chance to invest in the future of the company.
The Village of Waterford issued a Request for Proposal (RFP) in early 2020. MobCraft’s President and Cofounder Henry Schwartz described the opportunity as, “too awesome not to look into.” MobCraft presented its submission in April and won the RFP in May. The Village of Waterford is planning a multi-stage downtown development, with a brewpub being an anchor tenant in the plan. Rick Beck of Waterford and Geoff Beck of Chicago are key investors in the concept, bringing legwork of initial designs, plans with the village, and strong community ties to the project.
MobCraft Waterford is expected to open in the spring of 2022. Once renovations are complete, the space will boast river views from both the indoor and outdoor bar, a spacious patio with fire pits and lounge areas, and a full kitchen. MobCraft will expand their menu under the direction of head chef Abby Kazal-Thresher. The restaurant aspect of the taproom is still in development, as MobCraft plans to get input on concept and menu items from community members.
The Waterford taproom will also feature 1500 square feet of event space capable of hosting up to 150 guests. Event Manager Elise Strupp says, “I’m excited to be able to continue to grow MobCraft’s event program. We have hosted so many incredible events in our Milwaukee taproom, and the additional space in the Waterford taproom will allow us to host not only more events for larger groups but events of a higher caliber.”
The brewery in Waterford will feature a 3.5 barrel system. Brewing operations will focus on Taproom only and experimental brews. Director of Barrel Operations, Adam Thomas, says, “I’m looking forward to the Waterford location, we be able to focus on what the community wants to drink. Brewing on a smaller system will give us the ability to experiment and research new techniques that would be applied to our Milwaukee location. This is a great step toward being more versatile in our brewing.” MobCraft plans to collaborate with neighboring Waterford businesses the same way they do with neighboring businesses in Milwaukee. The newly opened Waterford Stillhouse and MobCraft are already planning a barrel-aged stout that will be aged in Waterford Stillhouse bourbon barrels.
